This recipe came about from an afternoon of experimenting. To be honest, I don't think there are ever enough chocolate recipes. Do You? This is a yummy and healthy slice, especially with the addition of Goji Berries.
What to do...
Preheat oven to 180 degrees. Line a slice tin.
In a large bowl, mash the bananas until smooth. Add coconut sugar, quinoa and goji berries and mix until combined
Scrape mixture into prepared tin. Flatten out using with spoon or spatula.
Place in oven and cook for 30 mins.
Remove from oven and place slice tin on a board until slightly cooled.
In a small saucepan melt coconut milk and chocolate together until the chocolate has melted and the mixture is smooth. Spread over the slice and leave to set.
Remove slice from the slice tin and cut into pieces. Enjoy with a cuppa.
For those of you who aren't familiar with the Goji berry, they are a nutritional powerhouse!
They are packed with anti oxidants, protein, amino acids, Vitamin C and fibre.
They are a natural anti inflammatory, anti bacterial and anti fungal. High in iron, calcium, zinc, selenium and many other trace minerals. We like to add them to homemade trail mix, granola, muesli, yoghurt or chia puddings.
You'll find Goji Berries at your health food store or you can also buy them online
Please Note: They are a member of the nightshade family, so best to avoid if you are sensitive. They may also have adverse reactions to some medications including diabetes, blood pressure medication and blood thinning medication (Warfarin).
