Berrynice Chia Pudding
This is a quick, easy and healthy breakfast or dessert. So easy that the kids can make it – an added bonus, agreed?
About the ingredients:
The chia seeds are a great source of Omega 3’s, fibre, protein, calcium and antioxidants.
Coconut milk is great for digestion, inflamation, weight loss and helping to balance blood sugar.
Organic berries are great source of antioxidants.

What you need...
400 grams organic frozen berries
1 x 400ml can coconut milk
1/4 cup raw honey , according to taste ( could replace with maple syrup or brown rice syrup)
1/2 cup chia seeds
1/2 teaspoon vanilla powder
Squeeze lime juice
What to do…
Place all ingredients into a blender and blend until well mixed. If you don’t want the lumpy texture from the chia seeds, keep blending until smooth.
Refrigerate for 4 hours or overnight. It will become thicker the longer you refrigerate it.
Decorate with berries, toasted coconut and chocolate swirls.
