Dark Chocolate Mousse
I’ve always been a huge Chocolate Mousse fan. Whenever I dine out, that’s what I look for on the desert menu. So I’m thrilled to come up with this recipe and share the indulgent experience of Chocolate mousse delishishness (is that a word) with my little man. Living with allergies is challenging enough but thinking it’s that little bit brighter when you can include chocolate mousse!
I do have a similar recipe in my Allergy Friendly Home Cooking eBook . This one however is light and fluffy and luxurious with the addition of the dark chocolate!
So to start the ball rolling I combined some grass fed gelatine (great for gut healing) with coconut cream until dissolved. The gelatin will help to set the mousse but it also has some great health benefits. I buy the Great Lakes unflavoured gelatin (orange packet), you can buy it from health food or online. Can be replaced with Agar Agar if you are vegan.

What to do…
In a medium saucepan place coconut cream and gelatine. Stir well and allow to sit for 15 minutes.
Stir again and add chocolate, coconut sugar, cacao and salt. Heat gently until chocolate has melted. Stir until smooth and set aside to cool.
Using an electric mixer, beat the aquafaba until light and fluffy and soft peaks form. Will take about 5 minutes and should whip up similar to the way egg whites do. Fold through the chocolate mixture until combined. Pour into glasses or ramekins. Refrigerate until set.
Enjoy with come whipped up coconut cream, fruit and grated chocolate
