Health Benefits of Fennel
Fennel, with it’s unique licorice like flavour has many health benefits and has been used in many cultures for its medicinal properties.
In ancient Chinese medicine, fennel has been used to help with a variety of ailments from congestion, help with stomach upset, insect bites, sore throat and can even help to increase the flow of breast milk.
Zucchini & Fennel Slaw
What you need
- 2 small to medium zucchini, spirallised
- 1 cup fennel, sliced
- 1 cup grated carrots
What to do:
Spiralise the zucchini and place it in a large salad bowl. If you don’t own a vegetable spiraliser, use a vegetable peeler to make long strips. Discard the seeded middle portion.
Add fennel and carrots to your zucchini. Top with Tahini Dressing (below).
What you need
- ¼ cup raw tahini
- ¼ cup fresh lemon juice (about 2 lemons)
- 1 clove garlic, minced
- sea salt and black pepper to taste
- 1 to 2 tablespoons of water or more for desired consistency
What to do
Combine the ingredients in a small bowl and whisk with a fork. Add more water to thin the dressing, if desired.
